The Piwi Collective aims to promote agricultural change in viticulture and supports producers in restructuring their vineyards to grow fungus-resistant grape varieties, which reduce the use of pesticides by 80%. The collective acts as a winery and contracts grape producers.

For Crémant Nou Rosé, Piwi grapes are harvested by hand, gently pressed, and fermented in the bottle using traditional methods.
