Crémant nou from the Piwi collective
The Piwi collective wants to promote the agricultural revolution in viticulture and supports producers in restructuring their vineyards to fungus-resistant grape varieties, which save 80% on plant protection. The collective acts as a winery and takes the grape producers under contract.
For the nou Bio Crémant, the Piwi grapes are harvested by hand, pressed whole and fermented in the bottle in the traditional way. Brut (dry) with notes of currant and brioche.
